In QuickBooks Online (QBO), you can change the check's date by manually editing each of them. The option to batch update the info of the checks is unavailable. Once done, you now print your checks.
You can also look for a third-party app that integrates with QBO to help you batch edit the checks. Here's how:

I can change the date before it prints but it changes it back as it prints to today’s date. I’ve tried saving it and also creating it as a memorized check. But neither solves my problem.
example…. I want to print a check with the date 9/15/2021. I change the date from 9/12/2021 before I select print. The check number comes up in the left upper corner and I select print. When the check finishes printing the date flips back to 9/12/2021 When you get the check out of the printer tray it also says 9/12/2021 not 9/15/2021.

I spent 2 days trying to figure this out.
I had changed the "default date to use for new transactions" and that didn't work.
I didn't see the "change check date when non-cleared check is printed". You saved me days of agony.
I guess the setting must have changed in a recent up-date.

In my company settings the box is checked for change check date when non-cleared check is printed and it still prints the current date.

I am having the exact same problem as the Original Poster. I have followed all of the suggestion you have made so far:
Re-Booted the PC
Ensure the box "Change check date when non-cleared check is printed"
Rebuild and Verify File
I also ran the QB Tools Hub PDF & Print Repair tool as well as the Program Diagnostics also in the Tool Hub.
None of this has worked. No matter what I do I keep getting checks with today's date.
Please advise.

So I tried unchecking the box "Change check date when non-cleared check is printed". This seems to have fixed the issue. If it's checked then it overrides whatever date you entered with today's date. But if you uncheck it then it uses the date that you entered on your check.
So I think I am good now. Thank You
That doesn't work. When I go to write a check in desktop, I put a future date in and the go to print and it changes the dang date to the day I am printing. WTH? How do you get the checks to print the date I want them to go out in the future?
