Can I archive 2020 but keep my current projects going?

QB is perpetual accounting and does not require archiving of years since all reports are date driven.  You can, however "close" your books as of the last day of our fiscal year to prevent changing data while the books are in the hands of accountant user so as to not mess up anything she is doing.
