Hey everyone!
I have three active credit cards currently:
Amazon (with New Day Cards)
Virgin Money
Virgin Atlantic
However, I cannot seem to find a way to link them with my quickbooks self-employed account. Has anyone had the same problem or figured out how to grant access to these companies?

Were you able to check if the following banks are showing up in the search results of your Banking screen? I'm unable to find the following accounts using my test account.
It seems that these banks aren't supported for open banking yet. You may attempt to tap the Request support for your bank option on the search screen.
In the meantime, you can manually add your bank transactions while requesting for support. You can check this guide for more details: Manually add transactions in QuickBooks Self-Employed.
