Thank you for posting here in the Community, office. Let's perform some troubleshooting steps to ensure you can see the GL you're looking for in the journal entry.
Since the GL words turn white when you add them to a journal entry, you can open your account to a private browser because there are times when the browser is full of frequently accessed page resources, which causes some errors or unusual responses.
Here's how to access incognito mode in some of the most commonly used web browsers:
Once logged in, create a journal entry and add your GL account again. If things are working, then it's likely the browser that's causing the issue. It can be fixed by clearing your cache and cookies. You can also switch to a different supported browser.

I completed the Incognito steps and selecting the GL account is the same in this mode as well. I have attached a picture of what I see. The GL code shows up, but my selection is not highlighted when I hover over what account I want. In the picture, I am choosing the 2nd GL Account (4126.01), but you are not able to tell this because it does not highlight the row and if it does, it is a very faint color that I cannot see. It used to be a green color that highlighted the row you were choosing.

Your troubleshooting efforts to resolve the issue are appreciated. Please know that changing the highlight color to green everytime selecting a GL account when creating a journal entry isn't possible.
I know how important it is for you to see the account easily when you hover over it. Since this feature is unavailable, I'd encourage you to send this as a suggestion to our Product Development Team so they can review it and may consider enforcing it back in the future. Here's how:
