I just started experiencing the same thing. I am unable to re-size columns. Some of my reports are completely useless to me now. I am unable to read the entire transaction memo or the entire G/L account. HELP!!

I know how you can re-size the columns on your reports again in QuickBooks Desktop (QBDT). I'll guide you on how to do it below.
From your description, it seems that you're now using a newer high-resolution monitor. With this, you need to change your default settings in QuickBooks so you can re-size columns on your reports again. Here's how:
Once you're done, log in to your company file and run any (financial or transaction) reports. If you're still unable to do so, continue troubleshooting by performing Steps 2 to 3 in this article: Fix screen issues in QuickBooks Desktop.

Oddly this just started in the current version I'm using when I changed my monitors in my home office. I had this issue previously on a different computer with a different company, but it was fixed by changing to a newer version of QB Desktop. Now the problem has started again and changing my main display to where ever I have QB Desktop is allowing me to change column widths. The problem I see is that going forward, when I am in a different office with different monitors, I'll have to figure out which monitor is my main display.
And the other fix suggested below made QB even slower to load than it already was. Time to change it back.
