Can I set a default payment method for entering customer payments so I don't have to to scroll down the drop-down list for every payment received?

Each customer can have a default payment method stored. Edit Customer>Payment and Billing

There is no default for all payments regardless of customer

You can start typing and about three letters in accept the method you started typing
