You know that you can't turn off multi-currency. Before you switched it on, you had to check a box that said you understand that you cannot turn it off. I doubt that customer support has a back-end way to do it but maybe they do.
That being said, it is not terrible. You have all the same functionality as before. You do not lose anything.

I don't know what "Insights" is, sorry. The original question was for QBO, not enterprise. Post a new question under Enterprise, so that others may answer
it is negative if you wish to downgrade to a lower level. you are unable to do so and that cost is thousands.
You can convert your data to QB Desktop file and use the trial version to access historical data for good. Then you may start in QBO Simple Start from scratch.
