Can I switch back to the previous invoice creation and editing interface? I find the new interface less user-friendly and would prefer to continue using the old version if that's possible.

Good question! Unfortunately, the option to revert to the previous invoice layout is no longer available. QuickBooks Online has fully transitioned to the updated experience. If you're finding specific workflows harder to complete in the new layout, feel free to share what you're trying to do and my team and I can help you find the equivalent steps.
