If you are seeing VAT applied when creating customer transactions, you can prevent it from appearing on future transactions by setting your default tax rate to Out of scope of Tax.
Here's how:
Go to the Gear icon and click Account and settings.
Select the Advanced tab, then click Edit next to Accounting.
Change the Default tax rate selection to Out of scope of Tax
Once done, click Save.

On the other hand, if you see VAT added to your QuickBooks subscription bill, please note that the Sole Trader plan automatically includes VAT in its base price.
